Возникла надобность сохранять данные, а Core Data я к проекту при создании не подключил. Могу ли я подключить ее теперь?

Да, спокойно. Для этого создаешь Data Model и в AppDelegate указываешь:

Только не забудь изменить YourDataModelFile на свое название. После этого как всегда import CoreData и полетели, также не забыв указать import CoreData в самом AppDelegate.
