Все работает нормально, но показывает день : часы : минуты : секунды. А как сделать так что бы показывать часы: минуты: секунды

Программно никак. Можно только скрыть дни через css, на что в jquery.countdown.css явно указывают строки:

.countDiv1{}
.countMinutes{}
.countDiv2{}

Вы можете использовать эти классы, чтобы скрыть части обратного отсчета, которые вам не нужны.

Таким образом единственным решением, является:

.countDays{ display:none !important; } //скрываем часы
.countDiv0{ display:none !important; } //скрываем двоеточия после часов
